Sfojo in Venetian means sole fish. It is characteristically flat, concealing itself at the bottom of the sea until it becomes one with the sand. Likewise as with the briccola which acts like a typical durmast pole marking berths and waterways, passing its years in symbiosis with the lagoon floor and the water which lets them notch and carve away.

Sfojo is an authentic slice of briccola, made by time and the sea and then recovered, weathered up to six months and treated by competent hands to give it a new light and a beautiful new life.
